What are some healthy easy meals that will keep us fit and also be family friendly?

As a business owner/chef in the food & fashion sector - I've had some wild consultations in the past 3 years! A couple of tips for a healthy menu. Keep it simple - for example, you can bread & bake some Tilapia or cod as a base for baja tacos.

3/4 cup GREEK Yogurt (regular is runny) add a few tablespoons of May if you want a smoother consistency - but take care - not to add too much.
1/4 cup chopped fresh cilantro
1 (1.25 ounce) package a generic Taco Seasoning Mix, divided - I use Whisk and Spoon's Mexican mix.
1 pound cod or other white fish fillets, a
Panko Break Crumbs, Mexican seasoning, yogurt, lemon juice
1 package (12) Taco Shells, warmed - corn is recommended; pass on the flour tortilla's

Toppings: shredded cabbage, chopped tomato, lime juice, Picante or Taco Sauce

COMBINE GREEK Yogurt, mayonnaise (if needed), cilantro and 2 tablespoons seasoning mix in small bowl.- more if you like it spicier.

Prepare/ Combine - You're going to Bread your fish and bake it. Panko & seasoning in one bowl, fish in bowl, and Greek yogurt with some lemon juice. Dip fish in yogurt then cover with Panko and place on greased cookie sheet. You can always grill fish too! I just coat the fish with seasoning & yogurt and place in a greased fish pan for the grill. Cook/grill, over medium-high heat for 4 to 5 minutes or until fish flakes easily when tested with fork. Cut up fish into 1-inch pieces

FILL taco shells with fish mixture. Top with cabbage (very thin), tomato and yogurt mixture, lime juice and taco sauce, dirty rice, and fruit salad.
why Greek yogurt? I recently heard you should use yogurt with no "fillers" for cooking is that why?

I always keep a big tub of non fat or low fat vanilla or plain yogurt in the fridge. with plain i add a splash of vanilla flavoring.
about a half cup of yogurt per person and 1 cup of ice per person add frozen fruit or fresh!& Asqueeze some lime in there sometimes a packet of splenda if needed too! blend in blender use water or juice to get it going !!!YUMMY! get me a straw! :P
I love my grill and my crockpot! And I use them both all year around. On the grill, I season kabobs and lean meats of all kinds with a little bit of vegetable oil and dried herbs. Rubs are also good. In my crockpot, I place lean cuts of mean with fat free/low sodium broths and also add herbs. Gives it great flavor.
Crock pots are good---Set and forget I like to say!
Yummy! Speaking of fat free/low sodium broths, I like to use these when making barley, cous cous, or brown rice, or when steaming veggies.
Chris--that sounds good!! I found a healthy alternative to artifical sweetners are Agave (syrup---yummy on yougurt and strawberries!) and also Stevia--- These are 100% natural. Agave comes from cactus is is gaining popularity now.

I like to drain plain yogurt to make a yogurt cheese---either use as a dip base or is good with honey on top or Agave.
Yes i am weaning myself off Splenda, My Hippies Granola Coloradian Sister told me it will kill me EECK!
I'm actually a big Stevia user I now use it in my coffee and Iced green tea
I have to look for that Agave i want to try that....
and Hmmm yogurt cheese i need to explore....
Agave is great. It has a light taste is is low on the glycemic index. you can bake with it, put it in smoothies, use it in oatmeal. it's great stuff. a little pricy, but worth it.
just use sugar or honey better yet
