Broccoli Pasta-great for picnics as no refrigeration is required. cleanup is a breeze
Cut broccoli into florets with stems.
Rotelle or Rotini pasta generally has a 11 minute cooking time.
Salt a large pot of water and boil.
Add pasta 1 large fisftul per person and 1 for good measure
When there is 6 minutes left to pasta cooking time drop broccoli in the same water returning to boil for 6 minutes.
Strain and return to pot allowing a bit of steam to go off and some water to evaporate.
Salt to taste adding 1 TBS EXTRA VIRGIN Olive Oil, more if desired.
*This can also be done substituting potatoes for pasta or use a mix of carrots,beans and broccoli
*String beans with penne pasta use the same cooking instructions but add thinly sliced garlic after straining and cover with lid to allow garlic to release flavor.
Yum, the baja tacos sound delicious!!! I will definitely try these out next week when my hubby is back in town.
Here's one I'd like to share that a friend gave me
Shredded Chicken for tacos
1 package chicken thighs- no skin or bone
1 can rotel
1 can mild rotel
1 packet low sodium taco seasoning
Put everything in the crockpot, give it a stir, set for 6-7 hours and then shred.
We put them in low-carb tortillas with reduced fat shredded cheese and a small spoon full of fat free greek yogurt (if you need the sour cream fix). It's so each and fast and we make it once a week.
Also, I've found a cookbook that I really like (everything in it is 350 calories or less) and tasty! It's called "Now Eat This" by Rocco Dispirito- it offers a lot of comfort foods (chicken fried steak and gravy- one of my favorites to make and is always a big hit with my friends)- love it!
