Pizzelles are a classic Italian treat during the holiday season. My husband & I grew up on this crisp, light wafer of goodness and always wondered why it is was only created once a year???

Well....I say bring back the Pizzelle!

This treasure of a recipe, from my husband's Great Aunt, is one I have improvised on to make a variety of flavors.

Surprise your guests with a savory pizzelle served along with appetizers or a citrus flavored burst of sunshine at your summer-time bbq!

Any way you try them...get into the kitchen to create & explore because...they're not just for Christmas any more.

6 eggs, beaten

1 cup Granulated sugar

½ cup Canola Oil

2 cups All Purpose Flour

½ TBS. Baking Powder

Traditional Flavorings: ½ tsp vanilla & 1 tsp of anise seeds

-Preheat Pizzelle iron while mixing all ingredients thoroughly

-Spoon a heaping teaspoon full of batter into the Pizzelle iron to cook

-Remove when slightly golden & place on cookie rack to cool.

(*makes approx. 40 cookies)

Be Creative!!! Improvise!

Mix up all the base ingredients & then separate some batter into small bowls for a variety of flavors. The batter works very well with zests, extracts & dried herbs/spices... to your taste. A little bit goes a long way !

Citrus Pizzelles-- Citrus screams sunshine for me!

Any Citrus extracts with zests of lime, lemon & orange ….serve with Margarita's this summer! Add to the top of your favorite sorbet!

Why not a Grapefruit & Orange zest Pizzelle on top of a Blood Orange Sorbet...Wow!

Almond Pizzelles

Almond extract with crushed sliced almonds...tastes great with some Orange zest too!

Hot Chocolate Pizzelles-- a fun favorite for kids of all ages!

We like having cookies with our hot chocolate...but why not hot chocolate in our cookies?

Put a teaspoon or two of your favorite hot chocolate mix into some pizzelle batter!

Lemon Pepper Pizzelles-- would be great for a dinner party with appetizers!

Lemon extract & lemon zest with Cracked Peppercorns

(why not ....add some dried basil, too?)

Cilantro & Chili Pizzelles--the crowd will go wild!

Dried Cilantro, Chili Powder, Cinnamon, Cumin....Serve with Coronas!
