Tomato Soup
How perfect for a cold , rainy day … homemade Tomato Soup--- Major COMFORT FOOD!
So easy to make and very versatile.
Dig in with some crusty, Garlic Bread ---side salad----and don't forget your glass of wine, too! Life is... GOOD!
1- 28 oz. can of tomatoes (Puree (smooth) or Crushed (chunky)...whatever consistency you are craving)
*I have even added diced tomatoes if I have them in the house for a more chunky-style soup --YUMM!
2-14 oz. cans Chicken broth
1- 14oz. can Beef broth
2 cloves Garlic, sliced
1 tbs. Olive Oil
1/2 package of Frozen Spinach (chopped or whole leaf...whatever you like---if you have fresh spinach that's even better! Just chop the fresh spinach and add to the pot for some 'burst of color' and of course, some Vitamins C & A for the day! :)
Salt, Pepper & Garlic Powder, to taste
Handful of Fresh Basil, chopped (* totally optional, but I just love it in soup!)
Small-sized pasta, cooked al dente
* In a medium sized soup pot, sauté garlic in olive oil on medium heat until softened & fragrant (You just can't beat that wonderful smell !!!). Then, add tomatoes, broths, spinach & seasonings to taste and allow to simmer for approx. 45 minutes.
* In a separate small pot, boil a couple handfuls of your favorite small-sized pasta (I use mini-penne) by package directions and add to soup when you are ready to serve....

Keep it simple by adding ...the always popular "Goldfish Crackers" for the kids or Crusty Herb & Garlic Flavored Croutons for us adults.
Think about .....using this fantastic 'Tomato' base with any of these ideas to take it to ...the NEXT LEVEL!
*Cannellini Beans & Ditalini Pasta (Pasta Fagioli!!!)
*Peas & Tubetti Pasta (Pasta & Peas!)!!!
*Sliced Onion & Zucchini (just sauté with the Garlic & Olive Oil before you add broths, tomatoes & seasonings!!!)
